I got the gold version of the game and after redeeming it doesn’t show or say anything about it being the gold edition

You have the right version, this is normal before a game is released. At launch you'll be able to check the downloadable content by right clicking on the game on Steam.
If you want to confirm the edition you can also check your licenses page on Steam https://store.steampowered.com/account/licenses/
